Flax Meal Brownies with Dates and Almonds

Having an abundance of flax meal on hand and a craving for something sweet led to the creation of this delicious treat.

This simple brownie was inspired by the Five-Ingredient Brownies recipe from Blue Apron.  With a few modifications and the addition of some toppings a new brownie favorite has emerged.

Ingredients

  • 1/2 Cup Flax Meal
  • 1 Cup Sugar
  • 1/3 Cup Cocoa Powder
  • 1 Teaspoon Baking Powder
  • 1/2 Cup Melted Butter
  • 2 Eggs
  • 1/4 Cup Almonds (Chopped)
  • 3 to 4 Dried Dates (Chopped)

Prepare

  • Flax Meal, Sugar, Cocoa Powder and Baking Powder
  • Melt butter in small bowl
  • Mix two eggs into butter
  • Pour butter/egg mixture into dry ingredients and mix until combined
  • Pour into greased 8×8 baking pan
  • Sprinkle top with chopped dates and chopped almonds

Bake

  • Place in 325 degree preheated oven
  • Bake until done, somewhere around 30-35 minutes or when a toothpick comes out clean

 


Whole Grain Bowl with Veggies and Egg

When I eat better, I feel better!  Eating better, to me at least, means making a meal from scratch at home with little to no processed ingredients.

I started following the cook smarts blog a few months ago and decided to try the free three-week meal plan they offered.  I was hooked instantly!  Not only were the meals tasty, they were made from fresh ingredients and were simple to make.  The provided shopping list was an added plus, I found that I had less waste and saved money at the store too.

Testing out these meal plans sparked my interest in trying new flavor combinations that I typically would not make at home.  After just a few weeks I started coming up with new recipes on my own.

This little grain bowl with veggies and egg was inspired by the sriracha mayo, from the cook smarts Chicken Banh Mi recipe.   A little drizzle of this simple condiment on top of my dish and this bowl was complete!

This dish is pretty simple, I just took what I had on hand and added some basic seasonings.

Ingredients

  • FarroOLYMPUS DIGITAL CAMERA
  • Sweet Potato
  • Mushrooms
  • Spinach
  • Edamame
  • Egg
  • Mayo
  • Sriracha
  • Lemon juice
  • Salt
  • Pepper
  • Garlic minced
  • Cooking oil or butter

Prepare

  • Cook farro according to directions on package.
  • Cut sweet potato into small cubes.
  • Mix together mayo, sriracha, lemon juice and garlic to taste.

Cook

  • Place sweet potato in microwave safe bowl and cover with water, heat in microwave to soften potato slightly.  This will decrease pan frying time.
  • Saute mushrooms in small frying pan with a little cooking oil or butter.  Remove from pan.
  • Add a little more oil or butter to frying pan, along with drained potatoes.  Cook until browned on all sides.
  • Add edamame to the small microwave bowl, heat in microwave until warm.
  • Saute spinach until wilted and remove from frying pan.
  • Fry egg over easy in frying pan or poach in pot of bowling water.

Assemble

  • Layer grains in dish, place vegetables on top of grains and top with egg, drizzle with sriracha mayo and serve.
